Instructions:
1. In a small bowl, stir together the hoisin, soy sauce, rice vinegar, and sesame oil. Set aside.
2. Breakup the ground chicken meat in a pan or wok with your hot sesame oil. Stir for two to three minutes and then add your garlic, ginger and onions and stir all together for two to three minutes then pour all into your slow cooker. Add your fine grated mushroom, graded carrots into the slow cooker with your favorite hot spice for a stronger hot spice that you like and can tolerate.
3. Pour the sauce over into your slow cooker and mixture and stir to coat. Cook low for two hours.
4. After two hour your slow cook chicken mixture is ready to serve into individual lettuce leaves. Top with remaining green onions, water Chester nuts and additional red pepper flakes as desired. Enjoy immediately.
